Dining Wins ACF Silver Medal
UR Dining Team Wins Silver at 2022 Chef Culinary Conference
University of Richmond chefs Cherelle Lewis-Seals, Nathan Hucks, Corry Comstock, and Peter Torneo won the silver medal in the team competition at the University of Massachusetts Amherst Chef Culinary Conference on June 10, 2022.
The competition is an American Culinary Federation endorsed event where chefs worked in teams of four to prepare a three-course menu for four and one buffet platter for ten plus one plated serving for the judges. Their winning menu creations were:
Appetizer: Lemongrass Shrimp & Mussels in tomato broth with watercress refresher
Entrée: Pistachio Crusted Pollock with mushroom zucchini fritter & warm charred corn & potato salad
Dessert: Brandy Poached Nectarine Crepe with berry sauce
Platter: Kenyan Inspired Tofu served with broccoli over a rice & lentil mix
